At Lallier, each of our sparkling creations arises from a meeting between nature and craftsmanship as exalted by creative spirits with complementary sensibilities. Together, we share our perspectives in order to create exceptional champagne inspired by the ever-shifting natural world.

THE RÉFLEXIONS PROGRAMME


More than an iconic range of champagnes born with R.010 from the 2010 harvest, the Réflexion range expresses the annual reflection of our Cellar Master, Dominique Demarville, in his creative quest for excellence. Freshness, purity, depth, and intensity are the watchwords of Réflexion cuvées expressing the individuality of a same harvest and reflecting on what makes the terroir unique.

Today, Lallier takes this concept a step further with the launch of its Réflexions Programme, which sees ambassadors the world over share their “Réflexions” on nature as a source of inspiration and on its role in their craft.

As part of this inaugural Programme, Lallier has invited three craftspeople whose ethos and values echo the brand’s philosophy: Grégory Marchand, a Michelin-starred French chef at Frenchie restaurant in Paris; Sophie Sellu, a London-based woodworker who crafts exclusively with storm fallen, sustainably sourced and reclaimed timber, and Marie Lefebvre, a French-born, Berlin-based perfumer and genuine scent explorer. They joined forces with Dominique Demarville, with a view to creating something unique together.

Dominique Demarville, Aÿ - France

Dominique Demarville is the Cellar Master and General Manager at Lallier. For him, “Réflexion is the most exciting and most demanding blend that we produce each year.”

Grégory Marchand, Paris - France

Grégory Marchand is a Michelin-starred French chef, confirmed locavore, and renowned entrepreneur. Much like Lallier, he creates moments of meeting and sharing, which, for him, involves developing unique dishes with seasonal products.

“Nature is an infinite source of inspiration. It is constantly evolving. It reacts differently to every human intervention. My ongoing challenge is to adapt my recipes to nature and not the other way around.”

Sophie Sellu, London – United Kingdom

Woodworker Sophie Sellu crafts with the material in its raw state in a continual quest for purity. She has been creating unique pieces under the name Grain & Knot since 2013. Like Lallier, she extracts the most refined expression out of her medium.

“By meeting craftsmen who share my values, namely, a connection with and profound respect for nature, I have been able to open a new chapter in my work. We fed into each other’s feelings, emotions, and inspirations to create a communal work of art, and it was very exciting.”

Marie Le Febvre, Berlin - Germany

Creator of emotions, Marie Le Febvre is a perfumer who explores new olfactory frontiers and awakens the senses. Nature, for her, is a source of vivid emotion, not unlike the emotion that Lallier allows to sparkle through its wines.

“When I arrived in Aÿ and discovered the vineyards, the first smell that I noticed was the rich, wet, mossy, dark, authentic, living scent of the soil! My work is based on fragrance, so I really enjoyed developing the olfactory element of our co-creation.”

LAILA GOHAR x LALLIER

A love of craftsmanship, natural materials, and curiosity is what brought artist Laila Gohar and Champagne Lallier together. In her work, Laila Gohar uses food as her medium to create high-profile, out-of-this-world collaborations inspired by the natural and culinary worlds. In 2022, she and her sister Nadia Gohar founded Gohar World, a family-owned tableware universe celebrating time, tradition, craft, and humor. Conceived with the intention of bringing people back together around the dinner table, the collaboration with Champagne Lallier was a natural fit.


This season, discover an exclusive capsule collection, Gohar World x Champagne Lallier, centered on the art of perfect champagne pairings. The collection features a trio of striking mother-of-pearl spoons and a corresponding dish, each item meticulously crafted in both function and design to enjoy the perfect bite that complements Champagne Lallier Blanc de Blancs. “Our partnership with Gohar World has created a collection that truly embodies our food-pairing philosophy,” said Dominique Demarville, Chef de Cave. “We are thrilled to share the beauty and sophistication of this collaboration with fellow champagne enthusiasts.”
