Blanc de Blancs, meaning “white from whites” in French, is a style of Champagne made exclusively with white grape varieties, the most common being Chardonnay. Lallier Blanc de Blancs, for example, is produced using 100% Chardonnay grapes, a testament to the pure expression of this variety.
The result is a Champagne that has a light yellow color with emerald reflections, and floral aromas with caressing pastry notes. The legendary purity and freshness of Chardonnay dominate on the palate, but Lallier’s signature inclusion of grapes from Aÿ, an area famous for Pinot Noir, brings a tender generosity, and a delicate power to the wine. Despite their proximity, these neighboring villages offer surprisingly distinct terroirs, resulting in Chardonnay grapes with unique personalities. We also grow exceptional Chardonnay in Aÿ, the only Grand Cru in the Vallée de la Marne, an area known primarily for Pinot Noir.

Lallier Blanc de Blancs is well suited to cellaring and aging. Its vibrant acidity, imparted by the chalky soils of the Côte des Blancs and Aÿ, combined with its inherent structure, allows it to evolve and mature over time, revealing hidden depths of flavor and complexity.
Lallier Blanc de Blancs is perfectly aged in our cellars for a minimum of 36 months before release and can be enjoyed straight away or laid down for up to 10 years. As with all Lallier cuvées further aging of our Blanc de Blancs is possible for those who prefer it if the Champagne is stored in the correct conditions. Keeping the wine away from light is especially important as the Blanc de Blancs is presented in a clear glass bottle.

The purity and freshness mainly derive from our meticulous selection of the finest Chardonnay plots and grapes. The intensity and depth, however, mostly come from our meticulous winemaking choices—careful blending of grapes from diverse vineyards, use of wines vinified in oak barrels in our blends, and thoughtful aging practices.
