For the debut of the R.021 Brut and R.021 Brut Rosé in Switzerland, Lallier has enlisted Swiss Michelin Star chef Christian Vogel. Through a thoughtfully crafted menu showcasing the new cuvées, Christian expresses the essence of an ever-evolving nature and the rich terroir of the Champagne region.

“For the R.021 Brut pairing, I`ve created a dish that combines the perfect balance from nature but still got a complexity in deep and fresh flavours like the R.021 Brut does.
The starter is made up of celeriac marinated with fir sprouts and green peppercorns and a quail yolk confit for the creamy texture.”
