The Réflexions Campaign brings together a collective of chefs from around the world, each bringing their unique culinary perspective to interpret the essence of Champagne’s terroir and the 2021 harvest.
To celebrate the launch of R.021 Brut and R.021 Brut Rosé in Belgium, Lallier partnered with Belgian Michelin-starred Chef Marie Trignon. For the occasion, she created a special menu to highlight the notes of the two new cuvées.

Throughout July 2025, La Roseraie will serve
an exclusive Lallier Réflexion menu, in which
Marie Trignon crafts a refined culinary dialogue with the R.021 Brut and Brut Rosé. Using local ingredients and elegant techniques, each dish
is carefully designed to highlight the complexity, freshness, and finesse of the champagnes.

“In the R.021 Brut, I picked up on a saline minerality. That’s what made me think of a langoustine. There are also citrus notes that gave me the idea of pairing the langoustine with a light, floral vinaigrette that’s slightly spicy, along with a bit of grapefruit gel.”
“What struck me about the R.021 Brut was its distinct, crisp effervescence. The R.021 Brut Rosé was even more delicate, with a lively color and a notably longer finish on the palate.”
