The Chef’s Immersion

The Réflexions Campaign brings together a group of chefs from around the world, each bringing their unique culinary perspective to interpret the essence of Champagne’s terroir and the 2021 harvest.

For the debut of the R.021 Brut and R.021 Brut Rosé in France, Lallier has enlisted French Michelin Star chef Thibaut Spiwack. He will host an exclusive private event in October 2024 in Aÿ, birthplace of Lallier, showcasing the new cuvées before their global rollout in 2024 and 2025.

Thibaut Spiwack was a natural choice for
a collaboration with Lallier, given his commitment to sustainable gastronomy and shared philosophy of respecting terroir and seasonality. His approach mirrors Lallier’s dedication to capturing the essence of each harvest, ensuring that his dishes harmonize with and amplify the unique character of the R.021 Brut and Rosé, made with the majority of grapes harvested in 2021. This partnership underscores the synergistic blend of craftsmanship and creativity central to the Réflexions Campaign.

For the R.021 Brut pairing, I’ve created a dish that showcases Champagne’s terroir while complementing the wine’s complexity. The main course is made up of confit potatoes with a rosemary Parmentier, prune aioli, and Baeri black caviar.”
